CRUST: 2 heads cauliflower, blended in the food processor or grated 3 large eggs 2 cups shredded part-skim mozzarella cheese 2 tablespoons grated parmesan cheese TOPPINGS: 1/4 cup organic (no sugar added) tomato sauce 1 cup shredded part-skim mozzarella cheese veggies and meats of your choice
Line a baking sheet with parchment paper, and preheat oven to 425ºF.
Steam Cauliflower and blend in the food processor
Mix in the egg, one cup mozzarella, and parmesan cheese. Once combined, scoop 1/2 cup scoops on the prepared pizza pan. Press into circles and bake for 10 to 15 minutes, or until golden.
Top the pizza with the sauce, mozzarella, and your choice of toppings. Bake in the oven until melted and bubbly, another 10 minutes.
