Cauliflower Crust Pizza

Cauliflower Crust Pizza


2 heads cauliflower, blended in the food processor or grated

3 large eggs
2 cups shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
1/4 cup organic (no sugar added) tomato sauce
1 cup shredded part-skim mozzarella cheese
veggies and meats of your choice


  1. Line a baking sheet with parchment paper, and preheat oven to 425ΒΊF.
  2. Steam Cauliflower and blend in the food processor
  3. Mix in the egg, one cup mozzarella, and parmesan cheese. Once combined, scoop 1/2 cup scoops on the prepared pizza pan. Press into circles and bake for 10 to 15 minutes, or until golden.
  4. Top the pizza with the sauce, mozzarella, and your choice of toppings. Bake in the oven until melted and bubbly, another 10 minutes. 

Our kids LOVE making and eating this high veggies, low calorie and low carb treat :) Enjoy!
