Healthy Roasted Sweet Potatoes

This is a perfect hot side for dinner tonight!

-Peel & dice 4 sweet potatoes
-Place in a baking dish and drizzle with olive oil & fresh minced garlic
-Bake at 375 for 1 hour
-Stir halfway through 

-Top with cilantro or parsley

Such an easy and yummy recipe! :)
