These are a great crowd pleaser on the weekend and so much easier than making everyone their own omelette!
-5 egg whites
-1tsp olive oil
-1/2 cup sliced mushrooms
-1/2 cup sliced peppers & onions
-1/2 cup sliced cherry tomatoes
-handful spinach leaves
-1/2 tsp garlic
-turn on oven broiler to high
-in a medium oven safe pan, heat olive oil & garlic on medium stovetop heat
-Sauté mushrooms, peppers, onion & tomato
-reduce heat to med/low and pour on eggs
-cook until eggs are slightly browned on the bottom (4-5 min)
-transfer pan to the oven to finish the top (2-3 min and watch closely or it'll btown too fast)
-remove with hot pad as pan will be HOT!
-use spatula to losses edges and fritatta will slide out of the pan :)
