Ultimate Reset Day 1


Yesterday I started the Ultimate Reset. A completely clean three week meal plan. It basically detoxes your entire body of junk while replenishing it with nutrients.

Last time I did this plan in Sept 2013 I lost 12 lbs! In three weeks!! Crazy how much you can slim down by eating whole foods.


This is challenging plan simply because you build so many habits you don't realize! A bite here, a snack there and then suddenly you can't understand why you put on weight or can't lose any weight.

First day and I dropped 3 pounds overnight. Crazy huh!!

****Final update!!! This round I lost 10 (TEN) pounds in 21 days!!! WOOHOO :)

Homemade Greek Dressing

This is so yummy on summer salads! See mine below!

Easy Homemade Greek Salad Dressing
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 1 Tbsp. balsamic vinegar
  • ¼ cup fresh lemon juice
  • 2 tsp. dried oregano
  • 1 clove garlic, crushed
  • 1 tsp. Dijon mustard
  • ½ tsp. Himalayan salt
  • 1 tsp. herbal seasoning blend
  • 2 Tbsp. chopped fresh parsley
Place in the blender and blend until well mixed :)
Keep in the refrigerator. Enjoy!

Creamy Garlic Herb Dressing


Creamy Garlic Herb Dressing

• ½ cup extra virgin olive oil
• ¼ cup apple cider vinegar
• 3 to 5 cloves crushed garlic
• 3 Tbsp. fresh lemon juice
• 2 Tbsp. chopped fresh parsley
• 1 tsp. Himalayan salt
• ½ tsp. Dijon mustard
• 1 Tbsp. unfiltered honey or raw agave nectar

Instructions
Place all ingredients in blender and blend on medium high for 30 seconds or until well mixed. Store excess in airtight container in refrigerator. If dressing solidifies when cold, let sit at room temperature until liquid, then stir. Makes 10 2 TB servings.

• 11 g fat
• 1.5 g saturated fat
• 0 mg cholesterol
• 150 mg sodium
• 2 g carbohydrate
• 0 g fiber
• 0 G protein

3 Ingredient Healthy Peanut Butter Cups






















WHAT YOU WILL NEED (this will make 8 peanut butter cups)
  • 4 tablespoons of coconut oil
  • 8 tablespoons of chocolate shakeology (get that HERE)
  • 4 tablespoons of powdered peanut butter (PB2, Just Great Stuff, or other brand)
  • 8 small cupcake tins (get aluminum ones not paper)

Place coconut oil in a microwave safe dish. Microwave for 30 seconds until the coconut oil is melted.
Divide the oil in 2 (1/2 for the bottom and 1/2 for the top of the cups). Stir in 4 TB chocolate shakeology. Set aside. **You will want to do this in 2 batches so it doesn’t harden up on you while the first layer of chocolate is hardening in the freezer.

Mix water with the PB2 until the same consistency as peanut butter. Set aside.
Place about 1 teaspoon of the chocolate mixture evenly between 8 cupcake cups in a mini muffin tin. Place in the freezer for 5 minutes.
Pull the muffin tray out of the freezer. Place a half a teaspoon of peanut butter mixture on top of each chocolate disk. Spread the peanut butter evenly over the hardened chocolate with a knife.
Stir in the remaining 4 tablespoons of chocolate Shakeology in the remaining oil. Use this to pour on top of the peanut butter layer.      

Place the muffin tin back in the freezer and leave it in there for at least 20 minutes.
The chocolate cups will slide easily out of the tin. Keep the cups stored in the fridge or freezer for the best consistency!
*Each cup is 80 calories and is 1 yellow container treat for the 21 day fix! :)
