Buffalo Chicken Lettuce Wraps


Buffalo Chicken is one of my most favorite meals because it is SO versatile!
(And easy too)

All you need is:
-2-4 chicken breasts (1 per person you're feeding)
-2 Tb or 1 packet ranch seasoning (I use flavor God)
-2/3 cup cookies wing sauce (has least calories & no added butter)

Directions:
All ingredients in the crockpot on low 6-8 hours

Using two forks to shred the chicken and place on top of lettuce leaves, salad, in pitas, or on top of a baked sweet potato.
For the wraps I just use lettuce leaves & tomato! Easy!

Chipotle Chicken Sausage Salad


One of the yummy summer salads I made during my 21 day fix program is the chipotle chicken sausage salad. You might not usually think of doing sausage on a salad but it was delicious! 


I portioned out lettuce, tomato, cucumber, chipotle chicken sausage, avocado, and low fat Italian dressing. 


Pour the containers and viola, you're good to go!!! 
No counting calories, just eating. 
Yum!


You could also use buffalo chicken sausage, Italian chicken sausage, or even turkey sausages! Have fun!

Post Baby 21 Day Fix Journey

In May we welcomed the 4th child in our family and completed our family. I waited 6 weeks before starting a fitness routine. I chose to do the 21 Day Fix due to the beginner modifications and extremely healthy meal plan. I'm nursing and didn't want any issues there.



I documented the whole thing on snapchat and Facebook if we are friends there :) 
30 minute workouts with a new baby are a breeze! I followed the modifier when I needed to. (C section killed any core strength I used to have!!!) 
I found I was getting stronger each week!!!

In 3 weeks I lost 11 lbs and 6 inches overall!

The best thing is the program didn't take a lot of time, because let's face it, I don't have a lot of time. 4 kids make my life busy. Fun, but busy.

Pumpkin Pie Oatcakes

Pumpkin Pie healthy style!!

I LOVE easy and healthy! These pumpkin pie oatcakes are here to save the day!

Ingredients:
-2 eggs
-1/2 cup cooked oatmeal
-Flavor God pumpkin pie seasoning or pumpkin pie spice

Directions:
Mix ingredients in a bowl or to make two pancakes. Look like regular pancakes. When the batter is bubbly flip.

These count as a red and yellow container on the 21 day fix!

Lemon Garlic Salmon Salad

One more to add to the summer salad series!



This one follows right into the 21 Day Fix program! 
Lemon garlic salmon filet salad!

Ingredients:
-4oz salmon filet
-lemon garlic seasoning (I get mine from whole foods)
-greens
-cucumber
-tomato
-radish
-dressing 

Directions:
Rub salmon filet with seasoning and cook in a pan on medium/high for 5 min each side

Fill containers and assemble on a plate.
Enjoy!!!

Bacon Lettuce Avocado Sandwich

BLA aka Bacon Lettuce AVOCADO!
I don't know about you but I love a good blt in the summertime! 

I used whole wheat bread, toasted with uncured sweet smoked bacon, lettuce leaves and thick slices of avocado.

Roasted Sweet Potato Salad

Summer Salad Series!!!
Nothing like a fresh, crisp salad in the summertime! Here's a fun twist on a grilled chicken salad with roasted sweet potatoes!

You'll need:
-1 grilled chicken breast 
-sliced cucumber
-diced red pepper
-sugar snap peas
-mixed greens
-pumpkin seeds (pepitas)
-1 sweet potato
-creamy garlic dressing recipe here 

Directions:
-Preheat oven to 400
-Peel and dice a sweet potato
-Toss in olive oil, garlic and pepper
-Bake for 25 minutes or until tender
(I batch cook mine ahead of time and store in fridge)

-Mix all ingredients and ENJOY!!!

My Challenger, Kelly Lost 115 pounds and won $500!



Tell us about your life before you started the program. How did you feel about yourself and your body?
I have always been an overweight person. I am the ultimate yo-yo dieter! All my life I have been up, down, and never happy. I always ate bad foods and couldn't understand why I always gained the weight back. I have now lost 115 pounds and I'm still going strong!

What inspired you to change your life and begin your transformation journey?
In 2007, I started Turbo Jam and lost a bit of weight before my wedding. I loved that program and instantly fell in love with Chalene! After the wedding, my husband and I started having kids right away. Two kids later I was up to 274 pounds. I had to change! I felt so drained and sick all the time. "Wow, way to go Mom! What a great role model!!! NOT." Now, my kids inspire me everyday to be my best.

What is the greatest challenge you faced before beginning the program? How did the program and Beachbody® help you overcome that challenge?
The biggest challenge for me was not believing that it was possible. I never thought that I could do this. Beachbody has changed/saved my life!! These results are from completing Turbo Jam, Turbo Fire and, P90X. Amazing programs!! Fitness excites me!!

What in particular did you like about the program you chose?
Omg Tony is the best! So motivating and so funny!

Describe the results you achieved with your Beachbody program. Which achievements are you proud of?
Ooohhhh the results.... My body has changed in so many ways! And it is still changing! I feel so strong and powerful. I am so proud of myself that I can complete a video without stopping or feeling like I am going to die. I have never felt so good in my life.

How has your life changed since completing your Beachbody program?
My self confidence is through the roof now! I am no longer feeling like I need to hide from anything. I can play tag with my 3 year old son and not have to sit and rest. I can outlast him!!! That's what it's all about. My kids. I am healthy so I can be the best Mom I can be!

Healthy Cookie Dough Dip Recipe


Would you like my healthy cookie dough dip recipe!? 

COOKIE DOUGH! 
(let's face it we all eat the cookie dough before we bake our cookies) it's so yummy! 
So here is the recipe 

Ingredients 
1 can (400g) chickpea rinsed and drained 
1 scoop vanilla Shakeology (get that here)
2 tbsp rolled oats 
1/3c PB or almond butter 
1/3c maple syrup 
2 caps vanilla extract 
1/2 tsp salt 
2 tsp stevia 
1 brownie quest bar cut up or real choc chips 

Mix all the ingredients (except quest bar) in a food processor and then fold in the quest bar
If you love PB like me.. Use 1/2 a cup! 
No you can't taste the chickpeas 
and my kids LOVE THIS

My Challenger Laura K Lost 80 Pounds and Won $500!


Meet my challenger Laura! She lost a whopping 80 lbs and won $500!

Tell us about your life before you started the program. How did you feel about yourself and your body?*
My life and eating lifestyle were horrible. When I was living on my own in college, it was very rare I would make my meals and eat at home. I was constantly eating fast food, and would eat more than I could handle. I can't even imagine how many calories I was consuming per meal! I felt horrible about myself, my confidence was low, and I hated looking at myself in the mirror. I always knew I had to make a change, but I always gave the excuse, "I'll start tomorrow or Monday." That tomorrow or Monday never happened.

What inspired you to change your life and begin your transformation journey?*
Last year, after having a trip to the ER because I was sick and dehydrated and complaining of stomach pain, I found out I had a fatty liver, which mostly was due to poor nutrition and lack of exercise. I was so embarrassed that I did not tell anyone. I started to eat better and lost some weight, but once I moved to Wisconsin for a job a few months later, I was lonely, and went back to my poor eating and that's when I got my heaviest at 346. But when I got engaged in November 2012, I realized that I was going to become a wife and a future mom, let alone wear a beautiful dress. I knew that this was the time to become healthy as I had the extra motivation. I wanted to be healthy for my husband, and future kids that may come. My fiance wanted to lose weight too, so we made a pact that we were going to get fit and healthy for our wedding.

What is the greatest challenge you faced before beginning the program? How did the program and Beachbody® help you overcome that challenge?*
I dislocated my right knee in the Winter of 2010, before I started Turbo Fire. I originally purchased Turbo Fire in 2011, but was not even able to make it through the WARM UP of Fire 55EZ! I would get really nervous about my knee, or be so out of breath before I started. I would just give up easily and quit. But after completing my very first Beachbody program of Turbo Jam, I was ready to re-attempt TurboFire, especially Fire 55EZ, and immediately LOVED the program. I instantly was hooked, and Fire 55EZ is now one of my favorite workouts! Before Shakeology, I would never eat breakfast. Now I drink Shakeology each morning for breakfast on my way to work, and now it is helping me get the proper nuitrition I've always needed! If I go a few days without Shakeology, I get cravings for it!

Why did you choose this particular program?*
I wanted a program to basically kick my butt, as well keep in the "Turbo" regime because I loved Turbo Jam. Also I needed to have a program to challenge me more, physically and mentally. Also, a program that has a good amount of cardio and is able to tone and sculpt. Now I am telling myself, "I LOVE this program!" It's so fun, I love the music, and Chalene Johnson always encourages you when you want to stop.

How has your life changed since completing this program?*
I have so much more energy and confidence! My fiancΓ© and I rarely eat out. We plan out our meals each week and go shopping and prep our meals together. People from all over compliment me on how great I look, and I get a lot of comments on how big of an inspiration I am to them, even people who are smaller than me! No fad diets or surgery here. Losing weight the hard way, but it's so worth it.
