Tomato Pesto Salad

This quick salad can be made up right before dinner and is so fresh!

  • 1 pint red grape tomatoes halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 heaping tablespoon jarred green pesto
  • 1 clove garlic, pressed
  • Salt and fresh ground black pepper
  • 1 head butter lettuce, cut into chunks

    Chop and mix all in all ingredients. Cover and store in the fridge until ready to serve.
