Tomato Pesto Salad
This quick salad can be made up right before dinner and is so fresh!
1 pint red grape tomatoes halved
1/4 red onion, thinly sliced
1/4 cup olive oil
3 tablespoons balsamic vinegar
1 heaping tablespoon jarred green pesto
1 clove garlic, pressed
Salt and fresh ground black pepper
1 head butter lettuce, cut into chunks
Chop and mix all in all ingredients. Cover and store in the fridge until ready to serve.
