Using a healthy chili recipe and adding in the smoky anaheim peppers I was able to use up a lot of our excess peppers. These are not spicy peppers and are great for stuffing and putting on the grill.
-1 lb lean ground beef or ground turkey
-1 can crushed tomatoes (28oz)
-1 onion diced
-3 cloves garlic
-1 can pinto beans
-1 can black beans
-3-4 anaheim peppers (or 1 green bell pepper)
-2 tb chili powder
-1 tb cumin
-1 tsp cayenne pepper
-In a large pot sautee onion in olive oil until translucent. Add garlic stirring to not burn. Cook a few minutes. Add ground beef or turkey and brown.
-After meat is cooked, add tomatoes, seasonings and diced peppers.
-Let simmer for 20-30 minutes stirring occasionally.
-Add beans, simmer 10 more minutes and serve! (I add beans last as they can stick to the bottom and burn.)
This can also be done in the crockpot on low 6-8 hours. Just pre brown the meat before hand.
Depending on the season or what I have on hand I may add more veggies or corn.
