Cake Batter Confetti Baked Oatmeal




Cake Batter Confetti Baked Oatmeal

1/3 c oats
2 egg whites
1/4 c unsweetened almond milk
2 Tb raw honey
2 Tb Vanilla Shakeology
1 Tb coconut oil melted
1 Tb butter extract
1/4 tsp baking powder
1 tsp sprinkles

 Mix all ingredients and bake in a ramekin dish at 375 for 30 minutes

 Topping is 2 Tb vanilla shakeology mixed with 2 Tb coconut milk (will be like a paste/frosting)

Dark Chocolate & Coconut Protein Bites

Ok I have a new one for meal prep sunday! 

Dark Chocolate & Coconut Protein Balls!! 

-1/2 cup Chocolate Shakeology 
-1/2 cup PB 2 powder 
-1/2 cup oats 
-3 tb natural honey 
-3 tb natural peanut butter 
-2 tb water 
-1/4 cup mini dark chocolate chips 

-mix and form into small balls and roll in organic unsweetened coconut (I got mine at trader joes) 

90 calories & 9g protein per ball

Clean Coffee Creamer - Coconut Coffee


Seriously though! Have you tried MCTs in your coffee?
Burn fat and gain energy!

Take
-1 tsp coconut oil
-cup of black coffee
-a few drops of liquid stevia
Blend in the blender for about 10 seconds

This is creamy, frothy, and delicious!
You won't need your coffee creamer anymore and this will give you a lot more energy thanks to the MCT's in the coconut oil

Easy Lunch - Asian Chicken Salad




Asian Chicken Salad


Have fun with your meals! This Asian inspired salad has greens, orange segments, grilled chicken, raw cashews & homemade Dijon dressing :) 

Layer:
Greens
Grilled chicken chunks
Cutie orange segments
Cashews
Drizzle with dressing

CLEAN EATING Dijon DRESSING

INGREDIENTS:
  • 4 tablespoons light olive oil
  • 3 tablespoons prepared dijon mustard, no sugar added
  • 3 tablespoons honey
  • 1 – 2 tablespoons braggs apple cider vinegar (to taste)
  • 1 pinch salt to taste

DIRECTIONS:
  1. Whisk all ingredients together in a medium sized mixing bowl.
  2. If it’s too thick for you, simply add water, 1 tablespoon at a time, until you reach the consistency you like best.
  3. store in the fridge

Clean Eating Hot Apple Crisp


It worked!! Ok here is my creation: 

Ingredients:
-4 apples peeled, cored & sliced 
-Oat Flour 
-Rolled oats 
-Olive oil or coconut oil 
-Water 
-Cinnamon 

Directions:
In a baking dish, place apples and 1/3 cup water. Sprinkle with cinnamon. I didn't measure. In a bowl mix 3/4 C oat flour and 3/4 C rolled oats. Cut in 1/3 C olive oil or coconut oil Sprinkle oat mixture on the apples Bake for 40 minutes at 375 ?:)
I ate mine with some vanilla Greek yogurt!

Healthy Buffalo Chicken Dip

Super Bowl Sunday is coming up!!!

Here is my healthier version of buffalo dip: 
INGREDIENTS:

 8oz low fat or fat free cream cheese 
 1/2 package of ranch seasoning 
 1/2 cup cookies wing sauce 
 2 cups shredded cooked chicken breast 
 1cup low fat shredded mozzarella cheese 
 mix ingredients and put in the crockpot on low. 
 Cut veggies for dipping!

When dip is hot and bubbly, enjoy!

Cauliflower Crust Pizza





INGREDIENTS

CRUST:
2 heads cauliflower, blended in the food processor or grated

3 large eggs
2 cups shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
TOPPINGS:
1/4 cup organic (no sugar added) tomato sauce
1 cup shredded part-skim mozzarella cheese
veggies and meats of your choice

DIRECTIONS

  1. Line a baking sheet with parchment paper, and preheat oven to 425ΒΊF.
  2. Steam Cauliflower and blend in the food processor
  3. Mix in the egg, one cup mozzarella, and parmesan cheese. Once combined, scoop 1/2 cup scoops on the prepared pizza pan. Press into circles and bake for 10 to 15 minutes, or until golden.
  4. Top the pizza with the sauce, mozzarella, and your choice of toppings. Bake in the oven until melted and bubbly, another 10 minutes. 

Our kids LOVE making and eating this high veggies, low calorie and low carb treat :) Enjoy!
