Things weren't always easy for us. We used to STRUGGLE. My husband and I both worked full time jobs but we were strapped down by our DEBT. Mortgage, car payments, student loans, etc. I knew we were meant for MORE. That we could enjoy life not just survive. 
In came an opportunity as a coach that changed our lives. An opportunity that allowed me to help others while helping our family. You can see below how it has allowed us to enjoy life. Summer Salad - Cucumber and Tomato Salad


Food prepping today for the week.
I prepped this easy fresh salad that'll last all week.

Ingredients:
-1 peeled & chopped cucumber
-1 cup cherry tomatoes sliced 

-1 Tb apple cider vinegar 
-1/2 Tb basalmic vinegar 
-1/2 lemon squeezed for juice 
-1 Tb Parsley 
-1 Tb Basil 

Mix and enjoy!

Healthy Buckeye Bites



Recipe:
-1 14oz can cannellini beans drained and rinsed
-1/2 cup unsweetened applesauce
-1/2 cup pumpkin puree
-2 Tb coconut oil
-1Tb vanilla extract
-1 cup peanut butter
-pinch of pink salt
-10 oz dark chocolate, melted (add coconut oil if needed)

-Line 2 baking sheets with wax paper
-Puree Cannellini beans in food processor.
-Add applesauce, pumpkin, coconut oil, and vanilla. Puree until completely smooth.
-Add peanut butter and pink salt. Puree until smooth.
-Scoop tablespoons of dough and roll into balls.
-Arrange on baking sheets and refrigerate for 15 minutes
-Take the dough balls out of the refrigerator and re roll smooth if needed. Place a toothpick in each ball and freeze for 30-45 minutes.
-Just before removing, melt the chocolate in a double boiler or microwave. (small increments of time in the microwave though to not burn the chocolate)
-One at a time, dip the dough ball 3/4 into the chocolate leaving a bit of dough showing so that it looks like a buckeye.

Store in the fridge until you are ready to eat them!
Makes 25-35 buckeyes!

Healthy Fix Approved Cookies

Eating healthy doesn't have to be boring!!! These cookies are clean, dairy free & gluten free! Plus they are absolutely delish!
Recipe:
-1 cup almond flour or coconut flour 

-1/2 cup applesauce 
-1/4 cup coconut oil melted 
-1/2 cup just good stuff powdered peanuts 
-1/4 cup almond milk 
-1/2 cup crushed chocolate covered banana chips

Mix & drop spoonfuls on a spreayed baking sheet 

Bake at 350 for 12 minutes

Avocado Dill Dip


This is a great dip that I got from my mom!
Yummy, healthy, creamy Avocado Dip. This easy recipe will surprise you

Recipe:
-1 avocado chopped 
-1 cup plain Greek yogurt 
-1 cup chopped tomatoes 
-1 tsp garlic powder 
-2 tsp dill 

Mix and serve for dipping with your favorite veggies or put a spoonful over grilled chicken or gilled salmon :) yummy!

Healthy Roasted Sweet Potatoes


This is a perfect hot side for dinner tonight!

Recipe:
-Peel & dice 4 sweet potatoes
-Place in a baking dish and drizzle with olive oil & fresh minced garlic
-Bake at 375 for 1 hour
-Stir halfway through 

-Top with cilantro or parsley

Such an easy and yummy recipe! :)

With a clean diet and additional exercise you can begin your journey to losing weight and getting a stronger core. 

We would LOVE for everyone to post their comments of completion, or post pictures or a video of parts of their workout or the whole workout, to the wall to help keep everyone motivated and to also try and hold everyone accountable.

We can't come to everyone's home to make you do these so we all are going to have to work together to try and complete this entire challenge. Remember your "Why" Why you decided to take on this challenge.

You can do this anywhere at your own convenience. You can do this each days challenge once a day! If you need to break each days challenge up, do half in the morning and half in the evening.

Believe in yourself, you can do this! If I can do it, YOU CAN DO IT! Always drink lots of water to stay hydrated!

Healthy Energy Bites


I whipped up some of these bad boys tonight!! 
I can't wait to eat some!! 
Ingredients are:
8 tablespoons PB2
3 tablespoons creamy peanut butter
1 tablespoon flaxseed
1/2 cup chocolate Shakeology
1/2 cup oatmeal 3 tablespoons honey
Mix and form into ping pong sized balls
Keep in the fridge and they will last about 5 days (if you don't eat them all first!)

Veggie Frittata Recipe



These are a great crowd pleaser on the weekend and so much easier than making everyone their own omelette!

Ingredients:
-2 eggs
-5 egg whites
-1tsp olive oil
-1/2 cup sliced mushrooms 
-1/2 cup sliced peppers & onions 
-1/2 cup sliced cherry tomatoes
-handful spinach leaves
-1/2 tsp garlic

Instructions:
-turn on oven broiler to high
-in a medium oven safe pan, heat olive oil & garlic on medium stovetop heat
-Sauté mushrooms, peppers, onion & tomato
-reduce heat to med/low and pour on eggs
-cook until eggs are slightly browned on the bottom (4-5 min)
-transfer pan to the oven to finish the top (2-3 min and watch closely or it'll btown too fast)
-remove with hot pad as pan will be HOT!
-use spatula to losses edges and fritatta will slide out of the pan :)

Nutty Monkey Protein Shake


I believe in chocolate for breakfast.
Or lunch, or dinner!

Here's my nutty monkey recipe!

1 scoop chocolate Shakeology
1 cup unsweetened almond milk
1/2 banana
1 tb Just great stuff powdered peanuts
1 cup ice
1/2 cup water
Blend & enjoy!

So good!

Summery Strawberry Walnut Salad


I hope it's a fitspiration for you! This is my healthy version of a salad from one of our favorite restaurants :)
The fruit makes it feel like a warm summer day <3

Its REALLY easy, which I prefer.

You need:
Grilled chicken, romaine lettuce, strawberries, walnuts, cucumber & a sprinkle of Parmesan cheese.

The dressing is homemade & easy! Mix equal parts of basalmic vinegar, mustard and honey mixed together.

This is all 21 Day Fix Approved too!
Just measure
2 green
1 red

1 Purple
1 blue
1 orange
